Lamb/Beef
Our beef and lamb are reared in Nottinghamshire and Derbyshire. Much of it is sourced from our tenant farmer, Pat Moss, who can often be found at the Shop buying his own meat for his Sunday roast. We hang his beef for as long as possible to guarantee the full flavor and tenderness that has been missing from British Beef for so long
Pork
Phil’s pigs can often be found roaming the lanes of the picturesque Welbeck village of Norton. He raises his own saddleback pigs, a traditional breed, which we turn into delicious bacon, sausages, chops and joints. Look out for our own black pudding made by our butcher Paul. The traditional breed and Phil’s farming skills come through in the meat as the pork has a distinctive flavour and colour. Customers often comment how it takes them back to their childhood.
Turkey
We have been buying turkeys from the Blagg family since we opened in 2006. Chris raises traditional bronze turkeys for us and feeds them with his own cereal crops. The result is a truly flavorful turkey with meat of exceptional quality, something Chris and his family take great pride in. A definite centre piece for a that special seasonal meal.
Produce
Bread
Our bread is supplied from the Welbeck Bakehouse located on the Welbeck Estate. Bread is baked in wood fired ovens using the finest organic ingredients such as nuts, fruits, vegetables and fats, with only flour, water, salt and sometimes a small amount of yeast. No 'improvers', additives or processing aids such as enzymes are used in the Welbeck Bread.
Beer
Welbeck Abbey Brewery is a small, traditional, wood-clad brewery, housed in a converted barn. The brewer prides herself on using only four finest quality ingredients; barley, hops, yeast and water – and nothing else! You can sample the results in pubs between Sheffield, Nottingham and Lincoln, and in the Welbeck Farm Shop.
Cheeses
Stichelton Dairy
Welbeck in partnership with Joe Schneider and Randolph Hodgson, director of Neal’s Yard Dairy, have developed Stichelton, the first organic raw milk Stilton produced in Britain since the late 1960’s. The milk is produced from Welbeck’s own organic herd of Friesian Holstein cows. The milk is piped directly from the milking parlour into Stichelton Dairy. That is where the magic happens.
The Cheese Counter
The cheese from the shop is sourced from the well known British Farmhouse Cheese Monger, Neal's Yard Dairy. We work closely with the founder and still very active owner, Randolph Hodgson, who regularly visits us and advises on seasonal cheese selection and care. Our selection includes a variety of cow’s, sheep’s and goat’s milk cheeses along with the local favourites: Stichelton, Sparkenhoe and Lincolnshire Poacher and kings of the British Cheeseboard: Montgomery’s Cheddar, Appleby’s Cheshire and Kirkham’s Lancashire.
